“ Sono stato con amici dall'ormai intramontabile e insuperabile Rolando, che da decenni delizia i palati con ricette di carne a base di tartufo Abbiamo ordinato menù completo , divini i ravioli e le carni di cacciagione , il tutto accompagnato da dell'ottimo vino della zona Il look del locale è rimasto intatto , cornici di personaggi famosi e riconoscimenti fanno di questo locale una delle cucine dialettali top della regione Rolando e i suoi figli sono gentilissimi e ti fanno sentire come a casa, poi come consuetudine in alcuni momenti della serata Rolando funge da breve intrattenitore con alcune delle sue storie locali che hanno dato vita alla cucina dialettale Tutto perfetto ”

Un totem, una garanzia di buon cibo che si perpetua in un ambiente intimo e familiare. Rolando vive la stagionalità delle materie prime, dal tartufo ai funghi, dalle carni alle verdure. E allora servirebbe uno spazio infinito per parlare delle tagliatelle con il ragù di una volta o i ravioli al tartufo e ancora della favolosa pasticciata e della conturbante faraona ripiena. Si dovrebbe parlare financo dei preziosi antipasti come dei dolcetti di fine corsa. Ma c'è soprattutto Lui, Rolando, inossidabile alla legge del tempo eterno come i versi di una poesia! ”
